Sure! Chop up a small onion however you like- I usually dice it roughly 1 inch pieces. Half a pound of bacon, also chopped up, say 1 inch pieces as well. Toss those into a frying pan over medium high heat, add salt to cover the onion, and cook covered until onion is starting to brown.
Meanwhile, toss potatoes into boiling water and cook for about 20 minutes or until they fall off a fork when stabbed. Drain and run under cold water, then slice- again, 1 inch pieces. Dice an apple as well, then add to frying pan with some garlic powder and a tiny sprinkle of brown sugar and some margarine or butter. Mix well, cover and let the flavors meld for another 5-10 minutes.
Then eat, and try not to eat it all.
